Pecan Sandies Cookie Recipe
1 cup butter (I use Land o
1 cup sugar
1 1/2 cup flour
1/2 teas. baking soda
1/2 teas. vanilla
1 teas. white vinegar
1/2 cup chopped pecans, optional
Thoroughly combine the
butter and sugar. Stir in vanilla and vinegar. Sift the baking soda and flour
and add to the butter/sugar mixture. Add pecans if desired.
Roll dough into 1 inch
balls. Bake at 300 degrees for 20-25 minutes. Remove from oven when edges are
slightly browned. Keep an eye on them while they are baking.... I usually only
have to bake them for about 21 minutes. Makes about 30 cookies.
I bake mine for 18 minutes
because I like mine JUST DONE. Play with the bake time according to your oven.
When the cookies come out, they are really soft so I let them rest on the pan
before trying to take them off so they will stay round and not scrunch up from
being too soft.
I have a melon baller that
makes forming the dough out MUCH easier.
use self rising flour because that is what I have on hand. Even though I use
self rising flour, I still go right by the recipe as far as the baking soda and
vinegar is concerned.
